It’s the 5th day of my Rhubarb Week here on my website and I hope that you’ve found it inspirational. But today I want to show you a little darker and richer recipe with rhubarb. It will remind you of caramel, apple pie, chocolate pie and lots of other tasty things. That’s what makes this brownie so special. It’s gooey and soft in the middle with crispy edges, everything you like with a brownie with a undertone of rhubarb. And it has a subtle heat to it. It’s just very special, twisted and delicious.

Ingredients:
12 servings

Compote:
1 cup chopped rhubarb
1/4 cup water
3 tbsp sugar

Brownie Batter:
1 tsp baking powder
1/3 tsp cayenne pepper
1 tsp ground cinnamon
3/4 cup flour
110 chili flavored good quality chocolate (I used Lindt’s)
113 g unsalted butter, room temperature
1 1/2 cup sugar
2 eggs, room temperature
1/4 chopped walnuts
60 g chopped good quality dark chocolate

Method:
Begin by making the compote. In a small saucepan bring rhubarb, water and sugar to a boil and let it simmer for 10 minutes. Stir so that the rhubarb breaks down a bit. Set aside.

Preheat oven to 175c/375f. Line the bottom of a 22x22cm baking pan with baking paper and spray the pan with cooking spray.

Moving on the brownie batter. Sift together flour, salt, cayenne, cinnamon, vanilla sugar and baking powder in a bowl and set aside.
Carefully melt 110 g chocolate in a small saucepan over low heat. Stir during the whole time so it doesn’t burn. Set aside.
Cream butter and sugar in a stand mixer. Add eggs, one at a time. Add the rhubarb to the melted chocolate and stir to combine. Now add this to the batter. Mix until combine and then add the flour mixture. Stir the batter gently and then fold in chopped walnuts and chopped chocolate. Pour this into the pan and cook for 35-40 minutes in the oven. A toothpick should come out clean when inserted in the middle of the brownie.
Let it cool completely before serving.

Serve as it is or with whipped cream. Delicious!
