The Ultimate Oreo Cupcake

Do you love oreos? Do you love chocolate? Do you love sweet things? Yes? Then you must try my Ultimate Oreo Cupcakes! They are so delicious that you wont be able to stop eating them! No, I’m not trying to make them sound better than they are, they really are the Ultimate Oreo Cupcake for oreo lovers. And if you’re not in love with oreos, you will be after trying theese! They are packed with oreos and has a cute surprise in the bottom for your guests to enjoy. They are also really easy to make, so no excuses people! Have fun!

20 cupcakes
24-25 oreos
87 g unsalted butter
50 light brown sugar
200 g flour
25 g cocoa powder
125 g sugar
1 tsp baking powder
1 tsp bicarbonate of soda
a pinch of salt
2 tsp vanilla sugar
1,5 egg (whisk one of the eggs and take our half, tadaaa)
70 ml sour cream
63 ml vegetable oil
150 ml ice cold water

4 oreos
225 g cream cheese (room temperature)
113 unsalted butter (room temperature)
1 tsp vanilla essens
380-500 g confectioners sugar (depends on how sweet you like it)

strawberries or/and oreos for decoration
(I really recommend you to serve them with strawberries, it really adds to the flavour of the cupcake)

Turn your oven to 180 c.
For cupcakes: Melt the butter and set aside and let it cool. Take out you cupcake cases and place them out in a cupcake tray. Put one oreo in each case (20 oreos). Chop the 4-5 oreos that are left and set aside.
Mix together flour, sugar, light brown sugar, baking powder, bicarbonate of soda, cocoa powder, vanilla sugar and a pinch of salt in a bowl and set aside.
In another bowl, whisk together egg and sour cream. And in a third, larger, bowl, whisk together the melted butter and oil. Add water to the end. Now it’s time to add the dry ingredients, whisk until it’s all blended and now add the egg mixture. Stir until incorporated. And then add the chopped oreos.
Now, fill you cases 2/3 with batter and cook for 18-20 minutes (depending on your oven). Take out and let them cool in the tray for 10 minutes and then let them cool completely on a wire rack.

Lets move on to the frosting.
Finley chop oreos in a food processor, it should look like soil, and set aside.
Beat butter until creamy on high speed, 5 minutes, then add the cream cheese and continue beating for 3 minutes on medium high speed. Add vanilla and confectioners sugar. Continue beating on medium low. Taste and add more confectioners sugar if you want it sweeter. Add the oreo “soil” and stir gently until it’s all incorporated.

It’s now time for you to decorate these badboys. I used a round tip for this, but you can use whatever you’d like! Decorate them with strawberries and/or more oreos. Delicious!
