This recipe is something that I’ve created for a food blogger challenge that I’m in. It’s the Danish site Madbloggerudfordringen that is hosting this challenge. This is the third time that I’ve entered a challenge on this site and I love it!. This time around the theme is colours. I was given the colour brown to work with. I could do whatever I wanted as long as you could eat it and the colour that I was given stood out and was the star of the dish/drink. Brown was a bit tricky, I thought it would be easier to come up with something that wasn’t chocolate or caramel, but it wasn’t. So after many hours of brainstorming I decided to go with the “safe” option – chocolate.
I’ve made a dome out of tempered chocolate and filled it with a dark chocolate mousse (flavoured with mille fiori). I serve this mousse with a raspberry curd, toasted pistachio, fresh raspberries, meringues and liquorice powder. I wanted to add some vibrant colours to the dessert just to really bring forward the beautiful dark colour of the chocolate dome. But the ingredients that I’ve added also helps lifting the taste of the mousse. 
This dessert came out great and it looks really beautiful too so I believe that my mission is completed  and I can’t wait to see what the other bloggers comes up with!

4 domes

Tempered Chocolate
100 g dark chocolate

Dark Chocolate Mousse
35 g butter
100 g dark chocolate
1 egg (room temperature)
1 tbsp honey (I used mille fiori)
150 ml heavy cream (very cold)

Method:
Temper the chocolate by by finely chopping the chocolate. Prepare a dubbel broiler and add 3/4 of the chocolate to the bowl that you put on top of the water bath. Stir with a spatula and, by using a thermometer,  bring to chocolate up to 56c. Remove the bowl from the water bath and add the rest of the chocolate (1/4). Continue stirring and bring the temperature down to 29c. Take the bowl back over the water bath and bring it back up to 32c, keep stirring! Now it’s done! Brush the inside of your molds with the chocolate and let it set in a cool place.

Now let’s make the mousse. Melt butter and chocolate in a small saucepan over medium heat. Set aside. Whisk together egg and honey and set aside. Beat the cream with an electric beater until firm.
Add the chocolate and butter to the egg and honey and stir until fully incorporated. Add a dollop of cream into the batter and whisk. Now carefully add the rest of the cream and slowly fold it in until everything is fully incorporated. Be careful so that you don’t knock out to much air from the cream.
When the molds has set fill them with the mousse and let them set in the fridge for 1 hour. If you want to seal the molds you can temper more chocolate and cut out circles that you can use as a bottom for the dome.

Now lets put this thing together. Paint your plate with raspberry curd. Carefully remove the dome from the mold (I was a bit unfortunate with my first one so it cracked) and place it onto the plate. Crush meringues and chop pistachios and add this to the plate. Add raspberries and add some extra curd. Finally dust the dessert with liquorice powder and it’s done

This is a dessert that doesn’t take that much time to put together and it really is delicious!

Did your dome break? Don’t worry! Call it “Broken chocolate dream” and tell your guest that this was the look that you were going for. Just plate it and make it pretty like this:
