Roasted Beet Root & Goats Cheese Salad

Is there a better combination than beet root and goats cheese? Don’t think so! This is a great and simple recipe for a good and healthy meal. For me, this is comfort food! 

1 serving (served as dinner)

2-3 beet roots
1 tbsp red wine vinegar
olive oil
1 garlic clove, crushed
fresh thyme
sea salt
70 g goats cheese
3 brazil nuts, chopped

Turn your oven up to 180 c. Clean and cut beet roots into bite size cubes. Place them in a oven proof baking dish. Add red wine vinegar, a drizzle of olive oil, crushed garlic, a few springs of thyme and sea salt. Roast for 40-60 minutes or until a fork comes out easily without any resistance. Take them out from the oven and let them cool for 5 minutes. Use a knife and carefully peel of the skin.
Assembling the salad: Place salad on a plate, drizzle with olive oil and some sea salt. Add beet roots, cheese and chopped nuts. Drizzle with honey and eat, it’s delicious!
