This is a recipe that was given to me by my mum (she got it from a close friend). I have adapted it a little bit, bot not that much since it’s got great reviews. It tastes really great and goes perfect with any type of chicken dish. I would say that this is this summers must have in the fridge!

Ingredients:
400 g rhubarb, chopped
1 1/2 red onion, finely chopped
80 ml water
1,5 tbsp vinegar
1 tbsp apple cider vinegar

8 dried apricots, chopped
1 dl raisins
1- 1 1/2 finely chopped chili
4 dl sugar
2, 5 tbsp curry
2 tsp ground ginger
1,5 tsp salt

Method:
Bring rhubarb, onion, water, vinegar and apple cider vinegar to a boil in a saucepan. Cover and let it simmer for 10 minutes.
Add the rest of the ingredients and let it simmer, uncovered, for 45-50 minutes. Stir occasionally.
Pour the chutney into sterilized jars and let it cool completely in the fridge. Keeps  refrigerated for 1 month. Delicious!
