As I’ve told you before, I love to combine rhubarb and strawberries. They balance each other out perfectly. Since I am a pie lover I feel that I’m obligated to give you a crumble recipe this week. We grew rhubarbs in our garden when I was a child, so I grew up eating lots of pies every summer. This is a recipe that I has a darker crumble than usually and it’s filled with season goodness. It’s so easy and it will take you no more than 10 minutes to make and 45 minutes in the oven. So let’s get started!

Ingredients:

Filling
1 1/2 cup chopped rhubarb
1 1/2 cup chopped strawberries
1/2 cup sugar
2 tbsp flour

Crumble:
112 g unsalted butter, chilled
3/4 cup flour
1/2 brown sugar, packed
8 walntus
1/2 cup rolled oats
1 pinch of salt

butter for greasing
ice cream

Method:
Preheat oven to 190c /375f.
Combine the ingredients for the filling in a bowl. Set aside.
In a food processor, pulse all of the ingredients for the crumble until it’s a fine crumb. Use your hands to carefully squeeze the crumbs together for larger crumbs. Be careful to not over work the crumb.

Lightly grease a pie form and fill it with filling and put the crumble on top. Cook for 40-45 minutes in the oven until the crumble has a dark colour and the filling is bubbling.
Take out and let it cool for 15 minutes or completely (depending if you prefer your pie to be warm or cool when you eat it).

Serve you rhubarb and strawberry crumble with ice cream or cream. Delicious!
