I always make a cake for my niece Mollys birthday. This year she wanted a cake decorated with a rainbow. So we sat down and searched for inspiration online. She found a few designs that she liked. I took inspiration from her favorites and this is the end result:
A Victoria sponge layer cake with vanilla cream, fresh strawberries and banana (since these were the flavors that Mollys requested). I decorated the cake with vanilla butter cream frosting, lots of sprinkles and marshmallows. I’ve also hidden a golden treasure inside the cake. This will make a great surprise a kids birthday party.

Victoria sponge cake
makes three 20 cm cakes
6 room temperature eggs, lightly beaten
300g caster sugar
300g softened butter
300g all purpose flour
1,5 tsp baking powder
0,5 tsp baking soda
4 tbsp milk
120g multi-colored sprinkles

Vanilla Buttercream Frosting
makes enough for covering and decorating the cake
250g unsalted butter, softened
4 cups icing sugar, sifted
1 tbsp vanilla extract
4 tbsp milk
food coloring for desired decoration

Filling
Vanilla cream mixed with a mashed banana
Fresh strawberries

Decoration
Marshmallows, golden coins and lots of sprinkles!

Method:
For the cake
Heat oven to 190c. Line bottom of 3 cake tins and butter the sides.
Beat butter and sugar together, add eggs one at a time. Beat between the eggs. Add remaining ingredients and beat until you have a smooth batter. Be careful not to over mix! Add sprinkles and divide batter between the three tins. Make sure the surface is even.
Bake for 20-25 minutes or until a toothpick comes out clean. The cake should be golden and spring back when pressed.
Let cool on a wire rack before removing tin. Let cool completely on the rack. Once cooled cut the top of each cake of and level them.

Frosting
Beat softened butter with paddle attachment or a hand mixer until really white and fluffy. This might take up to 10 minutes.
Gradually beat in the icing sugar until you have a very fluffy and smooth frosting. Beat in vanilla extract. Divide batter in different bowls. I used 1 scoop for each color, 2 scoops for white (that I used for clouds and covering the hole in the middle of the cake) and the rest i colored blue and used that for covering the whole cake.

Filling
Mix together vanilla cream (store bought or homemade) and mashed banana with a fork. Slice strawberries and that’s it.

And now it,s time for the fun part – assemble the cake!
Place one sponge on a cake stand. Take a bowl, cookie cutter or what ever you have laying around your house. As long as it’s round and represents how large you want the hole inside the cake should be. Place this item in the middle of your sponge. On the outside of the cookie cutter spread our your filling and strawberries. Remove the cutter and cut out a hole in the middle of your second sponge. Remove cutter and save the piece that you just cut out and set aside. Place the sponge with a whole in the middle on top of the filling and and place the cutter
inside it again for support. Repeat process
with filling on the layer. Remove cutter and
crumb coat the inside with a little bit of white frosting. Let cake cool in refrigerator for 15 minutes. Then fill the hole with your treasure. Leave a margin for a lid made from your cut out cake circle that you put side earlier. rainbow cake hidden treasure delliedelicious kids birthday partyThen place the last sponge on top and let the cake sit in fridge for 30 minutes.Crumb coat the cake with blue frosting and put it back into the fridge for another 30 minutes. Frost the cake.
Now it’s time for some piping. I used a small star tip for the rainbow and a large round tip for the clouds and edges around the top. For the sprinkles on top of the cake I mixed together some pink sprinkles with some blue. I used some blue disco sprinkle flakes on the sides and pearls around the marshmallows.

The cake turned our great and the kids loved the surprise inside. This is really a fun cake to make and eat 🙂 Delicious!
