Passionfruit vinaigrette

It’s Thursday and I’m having my weekly sushi craving. Every week my body screams for sushi, so I just have to listen and eat it. But since it’s passionfruit week, I thought I’d go a little fusion. Passionfruit and raw fish isn’t very Japanese, but in South America it’s very common, specially in Brazil. So I decided to do a sashimi with fresh Salma (salmon) from Norway and a passionfruit vinaigrette as a dipping sauce. I’ve added a wasabi cream just to bring the acidity down a notch. I’ve also used passionfruit seeds for some texture and freshness. To add some saltiness I’ve added some black roe. For some extra passionfruit taste I’ve used the vinaigrette and made a low profile passionfruit cream.

This is a perfect dish to serve as an appetizer or even on a buffet. But you can of course do what I do, just have it all to yourself. I hope you’ll like it!

Vinaigrette / dipping sauce
3 passionfruitssashimi passionfruit delliedelicious
1/3 red chili
0,5 tsp brown sugar
1 tsp white wine vinegar

Wasabi cream
The amount here depend on how much you
cream you want and how hot you like it.
2/3 cream cheese
1/3 sour cream
lime juice (to taste)
wasabi (to taste)
salt (to taste)
black pepper (to taste)

Passionfruit cream
The amount here depend on how much you
cream you want and how tangy you like it.
3/4 cream cheese
1/4 sour cream
passionfruit vinaigrette (to taste)

Fresh fish (I use Salma (salmon))
Black roe

Begin by making the vinaigrette. Strain the passionfruit pulp and use the juice for the vinaigrette. Save the seeds for plating. Chop the chili in small pieces. Stir together all the ingredients and add the chili. Set this aside and continue with the wasabi cream.
Mix all the ingredients in a bowl, taste taste taste! Set aside and repeat this process with the passionfruit cream. Again, taste taste taste!
Now it’s time for plating, you cut the fish as you like it and plate everything as you like.
