The second day of passionfruit week is here! Today I’m going to share with you, my favorite recipe for passionfruit curd. Curd is amazing! Everything tastes a little better with curd on it. So this curd is velvety and smooth, tangy and a little bit sweet. Perfect that is. It does not take you long to prepare this either, around 15 minutes. So there’s really no excuses for you not to try this! So put you apron on and let’s get cooking!

3/4 cup caster sugar
3/4 cup passionfruit pulp (I used 4 small & 1 big)
4 whole eggs
2 egg yolks
125 g butter (chilled and cut in to cubes)

Place sugar and passionfruit pulp in a medium sized saucepan. Carefully warm through over medium heat, add the eggs and stir continuously until it reaches 76c and thickens. Take of from heat and stir in the butter. Put it back on the heat and stir ’til the butter has melted.
Pour the curd into a warm, clean and sterilized glass jar. Put the lid (airtight) on and let the curd cool in the fridge.

Use the curd as cake filling, to decorate a pavlova, on toast etc. Anything will do, or you can just do as I do – eat it straight from the jar with a spoon. Delicious!
