Pancakes with Rhubarb Compote

I’ve mentioned before I absolutely love the combination of rhubarb and strawberries. The sweetness from the berries is balanced out by the tart rhubarbs. This is a great dish that you can serve for breakfast, brunch, on pick-nicks and as a dessert. Have it with ice cream or cream. Filled pancakes are always a hit and I think it screams summer.

Ingredients:
2 servings

Compote:
1/2 cup water
1/2 cup sugar
1 tsp vanilla sugar
2 cup chopped rhubarb
1 cup chopped strawberries

Pancakes:
1, 25 dl flour
1/4 tsp salt
300 ml milk
1, 5 egg
25 g butter

Method:
Begin by making the compote. Stir water and sugar in a small saucepan over heat until sugar dissolves. Bring to a boil and let it simmer for 3 minutes. Add chopped rhubarb and vanilla sugar and let this simmer for 10 minutes. Add strawberries and let it cook for 3 minutes. Set aside while you make your pancakes.

For the pancakes: Whisk together flour, salt and half of the milk until it’s smooth and even. Add the rest of the milk and then the eggs. Whisk until it’s nice and even.
Melt butter in on medium heat in a frying pan or pancake skillet. Add the butter to the pancake mixture and then fry the pancakes.

Fill your little pancakes with this delicious compote and enjoy!
