I just love drinks that are hot! Give me a chilli infused drink and I’ll drink it up in a second. This is a great variation to a hot chilli syrup – ginger syrup. In a drink that has tangy and fresh flavours this is perfect! But you can of course use it for other things as well. Such as topping for ice cream, cakes, cupcakes and so on. It will add an extra depth of flavour to the dish that you add it to. AND you can make candied ginger on the same time as you make the syrup. Double happiness!

Ingredients
yield: approx. 150 ml

1 1/4 cup water
1 1/4 cup sugar
100 g ginger

Method:
Chop/slice ginger into think slices or chunks, set a side.
Add water and sugar to a saucepan and place over medium heat. Stir until sugar has dissolved. Add the chopped/sliced ginger and bring to a simmer. Let it simmer for 20-25 minutes untilit has slightly thickened. Remove ginger and strain syrup in a fine sieve. Pour into a clean glass bottle and let it cool. Keeps several months in the refrigerator. Delicious!
