Danish pastry is something that I can’t get enough of. It’s flaky, sweet and delicious! But sometimes you just don’t have time to make a puff pastry (or maybe you just don’t want to), so this is a cheat recipe for those of you who want a quick and easy recipe for a delicious treat. 
You can fill your Danish pastries with lots of different things. But I decided to make a raspberry filling. It’s my favourite. And I used raspberries that me and my sister picked in the forest last summer.
And now you might ask “so, what’s the cheat?”. It’s store bought puff pastry. It’s a real time saver, I promise!

Puff pastry (I used 6 sheets and that was enough for 12 squares)
Egg wash (1 egg and 2 tbsp milk whisked together)


2,5 cup frozen raspberries
5 tbsp caster sugar
1 tbsp water
2 tsp cornstarch

1 cup confectioners sugar
1 tsp vanilla sugar
3 tbsp heavy cream
1 tbsp water (more if you need)

Start with the filling. Heat the raspberries and sugar in a small saucepan on the stove. Allow the raspberries to break down. In a small bowl, wish together cornstarch and warm water and add this to the berries. Gently simmer for 4 minutes on medium low heat. Take away from heat and let the filling cool completely. If you’re not going to use it straight away you can store it in an airtight container in the fridge.

Next step is the pastries. Preheat your oven to 210c.
The easiest shape is, of course, the square. fallow the instructions on the package to thaw the dough. Roll the dough with your rolling pin and cut it in to squares. Brush a little egg wash in each corner of the square and fold them in to the middle. Move them to a baking paper lined tray and press lightly over the edges of the pastry. Put about 1 tbsp of filling in the middle of each pastry and brush egg wash around the edges. Bake in the oven (middle shelf) for 15-25 minutes (depending on your oven) or until golden.

Let them cool completely on a wire rack and start making the icing.
Whisk together confectioners sugar,vanilla sugar, cream and water until it has a smooth consistency. Pour the icing over the pastries and serve them immediately.

Your kitchen will smell amazing and your guest will be really impressed to get fresh baked Danish pastries 😉 Delicious!
