Elderflower Cordial / Lemonade / Saft

This is a typical Swedish recipe for what we call “Fläderblomssaft” aka Elderflower cordial. Elderflowers has a very aromatic smell and tastes sweet and delicious. You can pick the flowers from may to June and you can freeze them as they are or make this refreshing cordial right away. It’s kind of a sugar syrup that you infuse with elderflowers and lemon for 3 days and then mix it with water or other liquids of your choice. You can also make a sorbet or ice cream by using this recipe as a base.

Ingredients:
1,2 l water
1,2 kg sugar
22 elderflower heads
2 lemons
30 g citric acid

Method:
Bring water and sugar to a boil in a saucepan. Slice the lemons thinly and wash the elderflower heads. Place lemon slices and flowers in a large saucepan.
Add citric acid to water and sugar syrup and pour this over the lemon and flower heads. Stir carefully and cover saucepan with a lid and set a side in room temperature for 2 days. Stir twice a day. Place the saucepan in the fridge for 1 day.

Strain the cordial through a fine sieve and pour into sterilized glass bottles and keep refrigerated for up to 2 months.
You can also fill plastic bottles 2/3 and freeze for later use. Or pour into ice cube trays and add one to a bottle of water whenever you want. Or add a cordial ice cube to your drink. It’s delicious!
