Everyone loves a good and fluffy chocolate mousse, right? This recipe is rich, creamy, easy and delicious. You can use is in a dessert like this, as a cake filling or just eat it straight from the bowl. Add fresh berries to enhance the chocolate flavour and some nuts for crunch. I’ve used Mille Fiori in this recipe but you can use any honey that you prefer. (The Mille Fiori that I’m using is organic from Italy, I bought it on this site.) I recommend you to use a chocolate of high quality for this mousse.

5 servings
70 g butter
200 g dark chocolate
300 ml heavy cream (very cold)
2 eggs (room temperature)
2 tbsp honey (I used mille fiori)

for serving/decoration (optional):
tempered chocolate

Melt butter and chocolate in a small saucepan over medium heat. Set aside. Beat the cream with an electric beater until firm, set aside. Whisk together egg and honey in a larger bowl.
Add the chocolate and butter to the egg and honey and stir until fully incorporated. Add a dollop of cream into the batter and whisk. Now carefully add the rest of the cream and slowly fold it in until everything is fully incorporated. Be careful so that you don’t knock out to much air from the cream.

Now “pour” the mousse into serving glasses (or what you prefer) and pace them in the fridge to set for about 40 minutes and then they’re good to eat. Decorate with berries and/or nuts. Delicious!
