Christmas Cocktail with Clementine

I found some lovely clementines in my local fruit market the other day. So I couldn’t resist buying a kilo or so. I thought that they would be great in a Christmas-inspired drink. So I decided to pair them with a dark rum that I bought the other day for my Eggnog. I also wanted to get some of the typical flavors of Christmas into the drink and what is more Christmas than cinnamon? Ginger is also one of my favorite ingredients (as some of you might now by now) so I had to have ginger in the drink. I topped it of with a splash of apple cider and one spray of Angostura Bitters to balance out the sweetness of the drink. To add some extra cinnamon flavor I rimmed the glass with sugar and cinnamon so you get an instant hit of cinnamon with every sip.
Perfect cocktail for dinner parties, Christmas Eve or anytime you feel like a refreshing drink 🙂  

Ingredients:
(makes one cocktail)
4 cl dark rum
4 cl ginger / cinnamon syrup (recipe below)
4 cl freshly squeezed juice from clemetines or mandarin
apple cider
ice
2 tbsp caster sugar
1 tbsp cinnamon
Angostura Bitters

Ginger & Cinnamon syrup:
1,5 cup water
1,5 cup caster sugar
90 g sliced fresh ginger
1 cinnamon stick

Method:
Begin by mixing sugar and cinnamon on a plate. Use a wedge from a clementine to wet the edge of your glass. Then rim the glass with the sugar & cinnamon blend.
Fill a shaker with ice cubes, add rum, ginger&cinnamon syrup and juice. Give it a little shake and pour into a cocktail glass, leave the ice in the shaker. Top with apple cider.
Garnish with a piece of peel and a spray of Angostura Bitters. Serve immediately. Cheers!

Ginger & Cinnamon syrup:
Add sugar and water in a small saucepan on medium high. Stir until sugar desolves. Add ginger and cinnamon stick. Let the syrup simmer for 5 minutes. Set aside and let it cool. Pour into a glass bottle. Add the cinnamon stick and a few pieces of ginger. Keep in fridge for up to two months.
