What a better way to start your weekend than with a delicious champagne breakfast. We had it today since it the National Day of Norway, 17:e mai. On this day you’re allowed to have as much champagne and hot dogs as you want. But a champagne breakfast is also perfect as a romantic gesture or as a birthday celebration. But I think that just having this type of breakfast once in while makes everything a little better 😉 As long as you keep your drinking at moderate level of course.
I love Mimosas so that’s what me and my boyfriend did today. And instead of champagne we used a Prosecco that really goes well with orange juice. You can eat anything you like for this type of breakfast and today we decided to have a sweet vanilla yoghurt with fresh strawberries and grilled cheese. A little bit of freshness and a little bit of guilty pleasure. Can it get any better? So here’s our champagne breakfast:

Ingredients:
2 servings

Grilled cheese:
4 slices of bread
300 g grated cheese (blend the kinds you like)
1,5 tsp dry mustard
1/4 tsp ground black pepper
1/2 tsp smoked paprika
ham, optional
butter for greasing

Mimosa:
300 ml sparkling wine, chilled
300 ml orange juice with pulp, chilled. No concentrate here people!

vanilla bean yogurt
fresh strawberries
coffee

Method:
Begin by preparing the yogurt and strawberries. Pour yogurt into serving plates and cut strawberries and add this to the yogurt. Put the plates on the table.
Make coffee.

Mix cheese with spices in a bowl. Butter both sides of each bread slice. Divide 2/3 of the cheese on 2 of the slices of bread. Add ham Put the other bread slice on top of the other and place in a hot frying pan.
Fry for 3 minutes on medium heat. Turn it over and sprinkle more cheese on the top. Let the other side fry for 3 minutes. Turn over and sprinkle the rest of the cheese on this side. Turn after 2 minutes and now your have to go by look here. You should not burn the cheese but it should get hard and crispy, and deep golden. It’s really important that the cheese inside is melted!
Remove from the pan and let them sit for 1 minute before cutting them into 2 pieces and serve.

And when all of this is done, make your Mimosas. Fill the champagne glass halfway with sparkling wine and fill the rest with orange juice. And now, let the breakfast begin! Delicious!
