My Monster Shake made with eggnog, vanilla ice cream and peppermint! The eggnog is full of Christmas flavors such as cinnamon and nutmeg. I’ve also added some rum to it for an extra kick. This milkshake is a calorie bomb, but who cares when it’s so delicious? It’s a treat for the eye, fun to eat and tastes amazing.Â
I made this recipe for a “challenge” that Kverdagsmat is hosting right now. The challenge is about Christmas Spices and I thought that this recipe is a fun way of showing of the delicious spices of Christmas. I just had to add peppermint that screams Christmas for me đ
So here it is, my recipe for my Monster Shake with eggnog, vanilla ice cream and peppermint:
Ingredients:
(makes one shake)
3/4 cup eggnog (recipe below)
3/4 vanilla ice cream
candy canes (1 crushed and 2 whole)
melted chocolate
Donut
Sprinkles
Marshmallows
Eggnog:
(Makes 600 ml or 4 servings)
3 egg yolks
75 g caster sugar
250 ml milk
250 ml cream
2 cloves
1/2 vanilla pod, split and scrape out the seeds
1 cinnamon stick
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
160 ml dark rum
3 egg whites
Method:
Begin by making the eggnog.Â
Whisk together egg yolks and sugar in a bowl until airy and pale in color. Set aside.
Add milk, cream, cloves, vanilla pod and seeds, cinnamon stick, ground cinnamon and nutmeg to a saucepan. Bring to a boil and remove from heat. Let it cool slightly. Add one fifth of the warm mixture to the egg-mixture and whisk together. Add remaining warm mixture and then transfer this back to the saucepan. On low heat slowly bring the mixture to 80c, stir constantly. Remove from heat and let it cool completely. Add the rum, cover and place in the refrigerator over night.
Whisk egg whites next day and gently fold them into your eggnog.
Assemble your shake:
Put your glass into the fridge so it gets cold. Once cool, rim the glass with melted chocolate and sprinkle with crushed candy cane. Place the glass back into the fridge.
Prepare your ice cream scoops and place them back into the freezer.
Mix eggnog and ice cream in a mug and pour this into your prepared glass. Take out your scoops of ice cream and place them on top of the glass and add candy cane, sprinkles, marshmallows, donut and straw.

I’ve tried many different eggnog recipes just to find the perfect one, and the result is of course a mix of many adapted recipes and I think that this is the best one, haha! đ

I found some lovely clementines in my local fruit market the other day. So I couldn’t resist buying a kilo or so. I thought that they would be great in a Christmas-inspired drink. So I decided to pair them with a dark rum that I bought the other day for my Eggnog. I also wanted to get some of the typical flavors of Christmas into the drink and what is more Christmas than cinnamon? Ginger is also one of my favorite ingredients (as some of you might now by now) so I had to have ginger in the drink. I topped it of with a splash of apple cider and one spray of Angostura Bitters to balance out the sweetness of the drink. To add some extra cinnamon flavor I rimmed the glass with sugar and cinnamon so you get an instant hit of cinnamon with every sip.

Well we’re soon there, New Years Eve 2015. And maybe you have started to plan your menu, or maybe you’re just looking for inspiration online. I’m in a challenge on the Danish site Madbloggerudfordringen where I have to come up with a drink and appetizer for the big evening. I love bubbles, and what is more appropriate on New Years Eve than bubbles? To make it a bit more exiting I’ve reduced an apple and pomegranate juice to a syrup that I’ve added to my favourite organic Prosecco. I’ve also added a little bit of rosemary to add some extra yum.
I wanted to bring the pomegranate into the appetizer as well and make something that is fast and easy, since preparing a dinner party can be quite stressful. So I’ve made parmesan chips and a salmon tartar with pomegranate seeds. It’s super fresh and delicious so that it goes really well with your drink.
This is a typical Swedish recipe for what we call “FlĂ€derblomssaft” aka Elderflower cordial. Elderflowers has a very aromatic smell and tastes sweet and delicious. You can pick the flowers from may to June and you can freeze them as they are or make this refreshing cordial right away. It’s kind of a sugar syrup that you infuse with elderflowers and lemon for 3 days and then mix it with water or other liquids of your choice. You can also make a sorbet or ice cream by using this recipe as a base.
Another Tiki Cocktail – Jet Lag. This is my boyfriends favourite drink. It’s filled with 2 types of rum, Cointreau, Falernum, Angostura Bitters, ginger ale and lime. It’s perfect for those of you who doesn’t like your drinks or cocktails to be sweet. It’s refreshing and the Falernum really gives the drink it’s tiki and Caribbean profile. Drink on the rocks or without, your choice. This is a great pre-dinner cocktail and your guests will be very impressed by the complex and fresh flavours that it provides. So go ahead and give it a try!

Since I love drinks with a little kick to it, I like to add some chili syrup to my cocktails. It’s super simple, as always, and has few ingredients. Try to add it to other things than cocktail. A little drizzle on your brownie perhaps?

There is a bar here in Oslo that I love going to. It’s called Aku Aku Tiki Bar. They serve delicious Tiki Drinks. The way the drinks are made are just great. It takes time to get your drinks, but they always come out awesome! Since they’re quite expensive me and my boyfriend decided to try and recreate our favourite drinks from that bar.
My favourite drink at Aku Aku Tiki Bar is “Surf Samba”. It’s made out of white rum, fresh raspberry purĂ©e, chilli and lime. Ahhh! I LOVE it! It’s so delicious, oh lord… So I just had to try this at home. After a few test rounds I finally got it right, perfect amount of liquor. Great balance of raspberries and lime, and a great subtle heat from the chilli syrup. Yum! I really think that everyone should try this drink, it’s so delicious!

If you prefer your drinks and cocktails to be sour and creamy, this is it! And who can say no to a pink cocktail? This is a vodka-based drink flavoured with rhubarb syrup, Advocaat and lemonade. If you have more skills than me you can get the Advocaat to layer itself on top of the pink drink.
