Chocolate & Stout Cupcakes with Crispy Bacon

Chocolate and beer is nowadays a pretty common flavor combination in the foodie world. But not many people outside this foodie world has actually tried or even heard of the combination. I got the inspiration for this recipe while watching an episode of 2 Broke Girls. Max made a Spring Break Cupcake with beer and chocolate. I tried to make cupcakes with this combination with a maple syrup frosting and it was delicious, I also tried dipping some bacon in chocolate for fun and wow I’m glad i did. It was soooo good!
So I thought that my dads 60th birthday party would be the perfect place to showcase this delicious cake and a new version of the cupcakes. Since my dad love Guinness I had to use it in the sponge and I filled the cake and topped the cupcakes with a light chocolate mousse to go with the rich flavor of the sponge. To add some sweetness I candied some pecans and for saltiness? Super crispy bacon, yum!
I decorated the cake and cupcakes with some extra glamor – 24 carat gold leaves and gold dust, just to make it a bit more special for my dad 🙂
Dad and the guests were a little bit skeptical to having bacon on their cake and cupcakes, I must admit. But they all loved it! And I already have a lot of orders for this cake 😉

I always make a cake for my niece Mollys birthday. This year she wanted a cake decorated with a rainbow. So we sat down and searched for inspiration online. She found a few designs that she liked. I took inspiration from her favorites and this is the end result:
A Victoria sponge layer cake with vanilla cream, fresh strawberries and banana (since these were the flavors that Mollys requested). I decorated the cake with vanilla butter cream frosting, lots of sprinkles and marshmallows. I’ve also hidden a golden treasure inside the cake. Candied ginger has been a favourite treat for me since I was a child. It’s sweet, chewy and hot. It’s just delicious! So I’ve decided that I need to make this so that I always have it at home when I crave it the most. It’s not that difficult to make and as a bonus you’ll also end up with a ginger syrup that you can use as an ingredient in drinks for example. This is a great gift when you go to dinner parties etc. 
Candied ginger keeps for several months in an airtight container. But my guess is that you will eat them all before that.  Read more

Last day of my passionfruit week is here. I really hope that you’ve found some inspiration for the use of passionfruit. I brought you some classics, such as flummery, and something fusion like, such as passionfruit viniagrette. But I thought that I’ll finish this week of with something I love – cupcakes! Passionfruit cupcakes with a passionfruit buttercream frosting. Sounds delicious? I know! And they are! They’re fresh and has a great texture. 
I decided, since Easter’s coming up, that I’d decorate them Easter style. So I colored the buttercream green and piped it to the cupcakes and used some sugar flowers for decoration. The soil is oreos that I’ve crushed. And finally I’ve made the bunny in fondant. Theese cupcakes will look great as a centrepiece during your Easter celebration, or you can give them away as an Easter gift.  Read more
