Blueberries have invaded our forest and it’s time to start picking!
Blueberries are great, they are full of good stuff and taste amazing. I always pick lots of them and freeze them down so that I can use blueberries all year around. And they keep for 1 year in the freezer so by the time that you’re out of berries they’re in season again. 
If you want to make something different with your blueberries than the usual pie or muffin recipe, this is it! Blueberry Chutney! It tastes amazing paired with lamb or with cheese. I used mine as a topping on a lamb sausage together with chantarelle chips and thyme. Delicious! 

Ingredients:
1 garlic clove, minced
1 dl shallots, sliced very thin
500 g blueberries
125 ml balsamic vinegar
3/4 dl brown sugar, packed
1 tsp tarragon (dried)
1/2 tsp chiliflakes
1/4 tsp chipotle chili
1/2 tsp cardamom
1 tsp salt
1/4 orange, sliced super thin

Method:
Fry shallot and garlic in a saucepan on high heat for 1 minutes. Add the rest of the ingredients. Bring to a boil and let it simmer on low heat for 50 minutes. Stir occasionally.
Pour the warm chutney into sterilized jars and let it cool completely in the fridge.
This delicious chutney keeps for up to 2 months.
