American – style Cheesecake with strawberries

Who can resist a cheesecake? It’s perfect for any occasion and it’s light and fresh.
This is an American-style cheesecake with strawberry jelly on top. I’ve cut out some small strawberry hearts that I’ve put inside the jelly for an extra cute touch. The cake takes a few hours to make so be sure that you give yourself enough time. It stores well in the fridge for 3 days.

Ingredients:
1 cake, 22 cm springform pan.

Crust:

13 Digestive bicuits
7 tbs of melted butter
2 tbs sugar

Cake:
1200 g cream cheese, room temperature
445 g sugar
48 g flour
190 ml sour cream, room temperature
1 tsp pure vanilla extract
4 large eggs, room temperature

butter for greasing
strawberries for decoration
strawberry JellO (make as much as you like for the topping). I like my JellO layer quite thick. Follow instructions on package.

Method:
Turn your oven to 175 c.
Crust. In a food processor, process biscuits until fine. Add sugar and butter and pulse a few time to combine.
Grease your 22 cm springform pan with butter or cooking spray and transfer the mixture into your pan and press it so an even layer. Take it and put it in the freezer for 20 minutes. Transfer the pan to the oven and bake for 15-20 minutes, until deep golden brown in colour and it should feel firm to the touch. Let it cool  completely on a wire rack.

Cake. Mix together flour and sugar in a bowl and set a side. With your electric mixer on medium speed, beat the cream cheese for 3 minutes until fluffy (you might have to scrape down the sides a few times during these 3 minutes).
Lower the speed to low and add the sugar and flour in batches. Mix until it’s smooth. Add the sour cream and vanilla extract, mix until it’s smooth. Finally add eggs, one at the time. It’s really important that you do not over whisk this batter! So be careful!

Pour the batter into the pan and place the pan into a roasting pan. Fill the roasting pan up halfway up the springform pan with boiling water and bake for 45 minutes. After the 45 minutes is up turn your oven down to 260 degrees and let it bake for 30 minutes more. After it’s been in the oven for 45 + 30 minutes turn your oven off and let the cake stay in there for another 60 minutes with the oven door slightly open.
After 60 minutes, transfer the springform pan to a wire rack and let the cake cool completely.

Follow instructions on your chosen JellO package and pour this over the cake. Let it set in the fridge. Carefully remove the side of the springform and decorate the cake with berries. And now, serve! Delicious!

(I’ve used a heart cutter to cut out small strawberry hearts for decoration, it looks so cute!)
