Figs are beautiful this time of year and my local fruit market had tons of them. So I bought some and decided to do something that would last more than just one meal – marmalade! I mean, who can say no to a delicious and sweet marmalade on top of a creamy cheese?
This marmalade is, as it should be, quite sweet so I’ve added some lemon zest to balance it out a little bit. You can also add a cinnamon stick if you want to give it a more Christmas feel. It’s also perfect as a gift in a cute jar. 

800 g ripe figs, roughly chopped
1 vanilla bean, split and seed scraped
400 g sugar
juice of 1 lemon

Put all ingredients in a bowl. Cover with plastic wrap and let this sit at room temperature for 8 hours.
Transfer to a pan. Stir over low heat to dissolve sugar. Bring to a boil and let it cook for 45 minutes on low heat. Stir regularly.

Remove vanilla bean and carefully mash the figs with a masher or fork. Remove from heat and et it cool for 10 minutes. Pour into sterilized jars and seal. Store for up to 3 months in refrigerator. Delicious!

Delicious Chanterell Sandwiches

I’m really lucky to be living in a part of our world where we can go out and pick anything we like in the forest. And this autumn the forest has been flooded with gold (chanterelles that is ). And the best way of preparing chanterelles is to just fry them gently in butter. Lots of butter. Like a lot, a lot! And some fresh thyme. It’s delicious! You can eat them directly out of the pan or you can do what I do and fry of some bread in the same pan after frying the mushrooms. And serve the chanterelles on top. Wow, it’s so simple and so yummy!
In this recipe I have used a sourdough bread from my bakery – Landbrød. It’s quite fine bread which I think goes great with this dish.

Ah, a great and delicious steak pie. Is there anything better? I think you already know that I am a true pie lover, and also a meat lover. So this is a perfect savory pie for me. You can add more veggies if you like and also substitute some of the fluid for your favorite beer. The variations is endless. Just be careful with the amount of fluid you put into the actual pie. We don’t want a soggy bottom as Mary Berry would have said.

Serving suggestion

Blueberries have invaded our forest and it’s time to start picking!
Blueberries are great, they are full of good stuff and taste amazing. I always pick lots of them and freeze them down so that I can use blueberries all year around. And they keep for 1 year in the freezer so by the time that you’re out of berries they’re in season again. 
If you want to make something different with your blueberries than the usual pie or muffin recipe, this is it! Blueberry Chutney! It tastes amazing paired with lamb or with cheese. I used mine as a topping on a lamb sausage together with chantarelle chips and thyme. Delicious!

Elderflower Cordial / Lemonade / Saft

This is a typical Swedish recipe for what we call “Fläderblomssaft” aka Elderflower cordial. Elderflowers has a very aromatic smell and tastes sweet and delicious. You can pick the flowers from may to June and you can freeze them as they are or make this refreshing cordial right away. It’s kind of a sugar syrup that you infuse with elderflowers and lemon for 3 days and then mix it with water or other liquids of your choice. You can also make a sorbet or ice cream by using this recipe as a base.

Breakfast Wrap

Lately I’ve been seeing a lot of different ideas for wrap-filling, so today I made a breakfast wrap. It’s Sunday after all so I had to have something extra delicious for breakfast. Since I’m a huge scrambled eggs & bacon fan I decided to put a whole breakfast into one wrap. It’s filled with crispy bacon, perfect scrambled eggs, ham, melty cheese and topped with chives. And wow, it was amazing! I really loved it and I will definitely make this so to a regular on my weekend breakfast (or lunch).

Tiki Cocktail – Jet Lag

Another Tiki Cocktail – Jet Lag. This is my boyfriends favourite drink. It’s filled with 2 types of rum, Cointreau, Falernum, Angostura Bitters, ginger ale and lime. It’s perfect for those of you who doesn’t like your drinks or cocktails to be sweet. It’s refreshing and the Falernum really gives the drink it’s tiki and Caribbean profile. Drink on the rocks or without, your choice. This is a great pre-dinner cocktail and your guests will be very impressed by the complex and fresh flavours that it provides.
