Welcome to my passionfruit week. Each day I will post a recipe that highlights the beautiful and tasty passionfruit. It’s my favorite fruit, hands down, and I would eat it for breakfast, lunch and dinner if I could. It’s full of vitamin C and fibers and it smells amazing. As I have told you before my uncle used to have a passionfruit vine in his garden at is old house. That’s were I fell in love with the fruit and I still am.
So today I’ve decided to make shortbreads with passionfruit. Shortbreads, who can say no to that right? And when passionfruit is added it’s even more irresistible. They look really pretty so they are perfect as a gift and you can cut them in any shape you want.

Ingredients (20-25 cookies):
115 g unsalted butter (room temperature)
1/4 cup caster sugar
1/3 cup rice flour
132 g plain flour
1 lemon ( rind finely grated)
40 ml fresh passionfruit pulp
pinch of salt

extra caster sugar (to dust)

Method:
In the bowl of a food processor place butter and sugar and process until creamy and pale. Add the two types of flour, lemon rind, salt and passionfruit pulp. Process until dough comes together.
Turn the dough onto a lightly floured surface and knead it until smooth. Cover it with plastic wrap and let it rest in the fridge for at least 30 minutes.
Preheat oven to 190 c and line your baking trays with baking paper. Roll out the dough on the lightly floured surface. It should be around 5 mm think. Use the cutter you wish to use and cut out as many biscuits as you can. Place them on the lined tray and sprinkle them with sugar.
Bake for 12-16 minutes or until golden. Let them cool 10 minutes on the tray, transfer them to a wire rack and let them cool completely. Store them in a airtight container if you’re not gonna eat them right away (which I think you will). Delicious!
